100 Day Raw Food Challenge

Hi, in my CSA basket today, I have fennel. Well, honestly I've never much cared for fennel, to me it tastes like black licorice ( I've always hated black licorice... ) Fennel is the only vegetable that I've always refused to eat!

I used to give away the fennel if there was some in the basket, but since going raw I can't really afford to buy all that much more than what's in my basket, so I've vowed to eat that fennel and stop giving away good food!!

Granted, maybe I like fennel now. I know going raw your tastes can change a bit, so maybe I'm getting all scared and nervous for nothing : )

But to help me out, please, does someone have a really GREAT recipe for fennel to make it not seem so bad? Thanks in advance

Now this is the kind of topic that just gets me fired up!!

M-C, here is a granny smith apple and fennel salad that Basil and I love. Just cut the parm cheese and replace it with something raw. Maybe chopped cashews?

Fennel and apple are wonderful together! Look around for other fennel/apple combo recipes if this one doesn't float your boat.

Thank you Bunny for the recipe! I'll tell you, I have always been pretty veggie literate, but sometimes I get more confused than the cashiers! I have been buying so many greens that when they are ringing me up and ask "what is t h i s" (in that annoying voice) I have to actually stop and try to remember. And-FENNEL is one of those things! Thanks for sharing! Now, I will challenge myself to make your recipe this weekend!

I have had fennel just grated with some olive oil and real salt and it was very delicous that way. I also love a juice that is in I am Grateful that is celery, grapefruit, apple, and a bit of fennel. YUM!

I looooove, love, love to juice fennel. If you juice one fennel bulb (you can juice it with the stalks on) with two apples and two pears, you'll have heaven in a glass. It's great topped with just a sprinkle of cinnamon or nutmeg. Mmmm. Now I want one myself, only I can't make one, because someone stole my juicer (seriously, who steals juicers?). :(

I got a gorgeous fennel bulb in my CSA basket this week too and had no idea what to do with it. I'm going to try the Fennel and Apple salad tonight! Thanks for the tip!

I love fennel with oranges and bananas and a sauce of lemon juice and sesame oil.
But I fear fennel is not good for you. If it tastes really bad, your body says that this is no food for you.

It is possible that you will sometime begin to like it, but before this time you should not compel yourself to eat it.

I have sliced up the bulb thinly and then tossed it with pesto and pine nuts!

thanks, I'll keep that in mind when I prepare it... i'll have a taste and see how bad it is, lol! I hope I like it. Today, I haven't dared try it yet. Maybe tomorrow : )
