100 Day Raw Food Challenge


Feed these recipes to your non-raw family, and watch them swoon! Both recipes from Matthew Kenney's wonderful book, Everyday Raw.

ROSEMARY-GARLIC MASHED POTATOES
This dish is an illusion of grand proportions - you will never know what you are eating or much about it, other than the fact that it is rich, yet airy, and quite delicious.

4 cups peeled and chopped jicama
2 cups cashews, soaked 1-2 hours
1 teaspoon sea salt
1-2 teaspoons chopped fresh rosemary
1 teaspoon nutritional yeast
black pepper to taste

Process jicama in food processor until grain-like consistency is achieved. Press out excess liquid with a cheese cloth or through a sieve.

Place in Vita-Mix with remaining ingredients and blend until well combined.

Serve immediately or warm in a dehydrator until ready to serve.
SERVES 4

PORTOBELLO STEAKS
This could not be more simple to prepare, but it highlights how easy it can be to make raw food at home.

4 portobello mushroom caps, stems removed
Olive Oil
Sea Salt
Black Pepper
Balsamic Vinegar

Gently toss portobello mushrooms with remaining ingredients. Spread on a Teflex dehydrator sheets and dehydrate for 1 -2 hours, until soft.
SERVES 4

Bunny says: "I made the portobella steaks for my friend Faithie in Honolulu, who calls herself a 'card carrying carnivore'. After dinner, she asked me for the recipe! I didn't have a dehydrator where I was staying in Hawaii, so I used the oven on low temp to make them."

My Day 5 started out with me sending Beckett and Basil off to Michigan for a couple of weeks to visit grandparents. I have been a bad Bunny, and haven't gotten enough to eat yet. Going to make a big salad now!

Bunny, Thanks for the new recipes. I can hardly wait to try them out... as soon as I get my hands on a dehydrator :) Edit: just read the part about using the oven on low temp, yay!

I mostly wanted to say that you are LOOKING GOOD! I've watched your videos since the beginning of your first 100 day challenge, and wow, you've really got the glow going on lately. Enjoy your day!

Day 5 is going really well, getting ready to go the local juice bar for some raw spring rolls. Also I am getting some homegrown zucchini and squash from one of my employees. Going to try raw pasta. But now that I see the portobello steaks I will get the ingredients for those, my husband loves portobellos. This forum has so much information. I don't have a dehydrator either and that had been putting me off quite a few recipes but there was a posting for looking for one in a thrift store and now I can try the oven on low.

woohoo -- those recipes look good bunny -- thanks matthew for sharing!! -- they were the 1st two recipes in my new raw cookbook -- special recipes that are loved and near and dear to my heart! -- cant wait for payday to get the couple ingredients i lack!

Day five and feeling alive! Corny, I know. lol

My husband LOVES portobello mushrooms, so I'll definitely have to try this out for him and see if I can get him to add more raw into his life. He had a fully raw dinner last night...which is a HUGE step for him! YAY! He didn't like it, but he ate it and was satisfied for the night!

I'm definitely going to have to try the mashed potatoes...after I get a food processor. Off to the thrift store today to hunt for one!

Day 5 already? Wow flying by! I've had a good day so far. I'm going to try this mashed potato recipe but the one's I've tried in the past weren't so good but I'm hopeful! Need to do dishes and trying to get a rough list down of who's actually coming to the wedding (which is on Fri. gulp).

Day five is already over and I must say I'm enjoying this whole thing more and more. Of course there are moments where I think "Please not salad again" but I wouldn't it have expected to be actual fun to try a raw food diet. That's all because of you, guys!!

Thanks for the recipies, but I have a little problem: Since I live in Germany I can't get jicama anywhere. Any suggestions what I could use to replace it?

Am I the only one to notice there is no garlic in the Rosemary Garlic Mashed Potato Recipe? Is this an oversight, or really how the recipe works?

Oh Bunny I bet you will miss Beckett and Basil, a couple of weeks seems a long time. I have some portobello mushrooms in the refrigerator and have been wondering how to use them. I am definitely going to try the steaks. That with a good sauce and salad on the side, yum. Can't wait. Thanks Bunny :0) Lisa
