100 Day Raw Food Challenge


Feed these recipes to your non-raw family, and watch them swoon! Both recipes from Matthew Kenney's wonderful book, Everyday Raw.

ROSEMARY-GARLIC MASHED POTATOES
This dish is an illusion of grand proportions - you will never know what you are eating or much about it, other than the fact that it is rich, yet airy, and quite delicious.

4 cups peeled and chopped jicama
2 cups cashews, soaked 1-2 hours
1 teaspoon sea salt
1-2 teaspoons chopped fresh rosemary
1 teaspoon nutritional yeast
black pepper to taste

Process jicama in food processor until grain-like consistency is achieved. Press out excess liquid with a cheese cloth or through a sieve.

Place in Vita-Mix with remaining ingredients and blend until well combined.

Serve immediately or warm in a dehydrator until ready to serve.
SERVES 4

PORTOBELLO STEAKS
This could not be more simple to prepare, but it highlights how easy it can be to make raw food at home.

4 portobello mushroom caps, stems removed
Olive Oil
Sea Salt
Black Pepper
Balsamic Vinegar

Gently toss portobello mushrooms with remaining ingredients. Spread on a Teflex dehydrator sheets and dehydrate for 1 -2 hours, until soft.
SERVES 4

Bunny says: "I made the portobella steaks for my friend Faithie in Honolulu, who calls herself a 'card carrying carnivore'. After dinner, she asked me for the recipe! I didn't have a dehydrator where I was staying in Hawaii, so I used the oven on low temp to make them."

Day five is already over and I must say I'm enjoying this whole thing more and more. Of course there are moments where I think "Please not salad again" but I wouldn't have expected it to be actual fun trying a raw food diet. That's all because of you, guys!!

Thanks for the recipes, but I have a little problem: Since I live in Germany I can't get jicama anywhere. Any suggestions what I could use to replace it?

Day 5 is going well...I had a large bananas-spinach-berry smoothie this morning, along with some raw granola, for lunch i had delicious celery soup and tomato walnut salad....

Those recipes look really yummy! Day 5 has been decidedly easier than say, Day 3. I actually broke out in exercises this afternoon! :-D

It's amazing how dead sauteed portobellos seem after making them like this! I mean really, all I was eating was a bunch of olive oil and spices...I should have just taken a spoon to the olive oil bottle! I would have gotten the same nutrition! Anyways, these mushrooms are great, and truly a great recipe to share with my raw-skeptical father! Thanks as always

I bought this book and Wow it is full of mouth watering yumminess and is much easier to use than raw food, real world.

Linda - Use Parsnips, rutabagas, kolorabi or turnips as a substitute for scrumptious "mashed potatoes". Parsnips are sweeter, but young, small rutabagas, turnips, or kolorabi work great, too!

Day 5 rockin for me too! I find that the motivation this forum has given me has also driven me to...START USING MY JUICER! I KNOW! Who'd have thought? Juicers are traditionally designed for dust gathering and looking big on the worktop. Anyways, doing that once a day at the moment and loving it. Great to be on here and get a sense that other people are doing all the same stuff. Well done everyone!

I'm having a really rough time with sweets!!! Please help! They've been my downfall and I was doing so well before the challenge began and then day 3 started and I haven't had a 100% raw day since! HELP!! Thanks in advance!

Day 5 is going great so far. Still feeling a little poopie but went to the gym and the golf range so not feeling that bad.

Those recipes look great. Thanks for posting them. Hopefully I can get a dehydrator soon.
