100 Day Raw Food Challenge

Just got my new dehydrator in the mail. It looks purty on my counter, but what to do with it? Who has some lip smackin' finger lickin' suggestions and recipes? I want to make RawVOLUTION Onion bread and Alissa Cohen's Banana Bread, but as they say in Jamaica, "me 'fraid that" (translation - I am afraid! or rather a bit intimidated by the machine.." Hey Melissa,

I got flax crackers drying in mine right now. I learned it from a demo on youtube.com.

Just go to youtube.com, then search for greensmoothiegirl. She has several raw food demos. Click on the one that says flax crackers and then try your own version.

You could a do an easy banana crepe. Toss a ripe banana, pinch of cinnamon, 1-2 teaspoons of agave if you like, and even young coconut though it is not necessary, into a blender and blend. Spread on a teflex sheets in flat, even circles and dehydrate 8 hours or so. Then flip and dehydrate another hour and fill them with chopped up fruit for breakfast. (Just a plain banana works too)

Here is another onion bread recipe that I like even better than rawvolutions. (I like it better because it is lighter colored and seems less olive-oily)

Inspired by Cafe Gratitude's bread recipe-
1 1/4 pounds sweet onions, peeled
1/2 cup ground sunflower seeds
1/2 cup ground golden flax seeds
1/4 cup olive oil
1 1/2 ounces Nama Shoyu
2-3 tablespoons agave nectar

Put onions in food processor with "S" blade and process into small pieces, but not mush. (Mush works great too) Put into mixing bowl with other ingredients and mix thoroughly. Smooth on dehydrator sheets about 1/4" thick. Dehydrate until you can flip them, then flip and score into pieces. Dehydtate again until done.

Thanks for the tip. I will try the flax crackers! I love Jamaica...they eat really natural down there, (except for the jerk chicken...) ..I will go on you tube..

Kale chips! Just toss de-stemmed kale lightly in some seasoned olive oil and dehydrate at 104 for 5-6 hours. YUM! Season with whatever you like... cumin, salt and pepper, chili powder, all of those ;)

These corn chips are a big hit with everybody! I even served them at a party where no one was into Raw. Several guests asked to take some home and placed orders for me to make them more.!

CORN CHIPS ( or Tostadas)
(Makes appx 4 trays or 20 tostadas)
Equipment: Food Processor and a Dehydrator
1 c golden flax seeds, soaked 10-12 hours in 2 c water
1 c almonds, soaked 10-12 hours
3 c fresh corn kernels or a 16 oz bag of partially thawed frozen corn
1 c yellow bell pepper, seeded and chopped
1 ½ TBS onion powder
2 tsp cumin seed, ground
1 1/2 TBS dried oregano
1 tsp Celtic Sea Salt, or to taste (optional)
1. Drain almonds and process until fine. Remove and place in large mixing bowl.
2. Process peppers, corn and seasonings until finely minced. Remove mixture to
bowl with almonds.
3. Process flax seeds until they are as smooth as possible and a gooey consistency.
Add to mixing bowl with almonds and corn mixture. Hand mix thoroughly.
4. On dehydrator teflex sheets, spread batter about 1/8 - ¼ inch thick.
5. Dehydrate at 110 degrees for about 1 hour, then with a rubber spatula, score
chips to desired size and shape. (or use your retired pizza cutter)
6.Return to dehydrator for about 3 more hours, then flip your chips over and off the teflex sheets.
7. Dry chips for about 6-8 more hours, depending on desired crispimess.
8. Break chips apart and serve with your favorite fresh dips, guacamole or salsas. Enjoy!

Also yummy with almond butter and honey based coating before dehydrating the kale!
