I've finally gotten us some really raw almonds and I've been making the kids almond milk (the two-year-old thinks it's awesome. The four-year-old is witholding judgement). Now I need recipes for using the remaining almond meal. I'm wary as the stuff by itself and mixed with agave and almond extract (an attempt at raw marzipan) were both absolutely henious. So. Wary. What possible recipe could make this stuff tasty?
That's what I do with mine sometimes. Just make it how you like it using the almond meal instead of garbanzos. I made it for my daughter a couple weeks ago and she couldn't tell it was different.
You can also use it for a kale/chard/lettuce taco stuffing. Chili powder, cumin, garlic, onion, etc. It's kinda like tofu in that it's pretty all-purpose and will morph into whatever you want it to.
Go crazy.
You might also want to try 1/2 almond and 1/2 cashews for your nutmilk. Yum.
My daughter grew up on soymilk but we've switched to almond/cashew. Once you get into the soaking-blending-straining groove it's a piecacake.
You could use it as a base to make raw cookies or burgers. Just add dates, coconut and other goodies to make them cookies and veggies to make the burgers. You could use the pulp from your juicer (if you have one) when you juice veggies. I know there are recipes out there using leftover almond pulp. Just hit up any of the raw food websites with recipes and I know you'll find a few.
Throw in any kind of fruit...blend up some sesame seeds, hemp seeds...whatever. Cinnamon is always heavenly in sweet cracker/cookies. Be adventourous make sure you write down what you throw in case it turns out way too good....or if you want to tweek it next time.
Angela Elliott has this great Apple/Almond Meal Cereal recipe in her book Alive in 5. It is something like: 2 cups Almond meal, 2 apples (cored, peeled and diced), honey, vanilla and cinnamon. It was really yummy!! My daughter was not cooperating with our decision to do raw for 30 days.....EXCEPT for the cereal....that she ate ALL. THE. TIME. :)
I make a raw spread out of it by adding sea salt, olive oil and cayenne powder. We love it on our wraps or with finely diced celery. You can also add other herbs to it or garlic depending on your taste. It is actually one of my downfalls, I love it so much and eat too much of it. It is even better after it has had time to sit in the fridge for a couple of hours. I also make spoon fudge with it by adding honey, cacao and dry cherries or raisins.
