ANDRE'S REVENGE DAY 14- Bunny's Bee Pollen Brownie Bites


Today I am back on cutting board cam! Things get a little shaky, but I swear I haven't been drinking. The Birthday Fairy sent me the recipe for brownies, and I was eager to get into the kitchen and make them for you. But the recipe calls for walnuts. I found out in my first challenge that walnuts make me retain serious water. So, I whipped up my own version of brownies based on the recipe. My ingredient list is kind of wild, but don't be afraid. They're delicious! And even extra nutritious since I threw in a shot of bee pollen!

1/3 C pine nuts
1/3 C sunflower seeds (I probably say sesame seeds in the video. I always do!)
1/3 C pumpkin seeds
1 C pitted dates
1/4 C cacao powder
Pinch of vanilla powder
1 TBS BEE POLLEN!!

Soak the nuts, seeds, and dates. Then blend all in food processor until smooth and sticky. Spoon onto a plate and put in the freezer to flash freeze. When flash frozen, put bites into an airtight container and leave them in the freezer until you're ready to eat them. Pop them into your mouth, or put in dehydrator to warm them up.

For day 15 which is what I think today is I will be attending a class on fermenting this evening. We are going to learn how to do the rejuvelac, cheeses, yogurt, and cultured vegetables. Can't wait. I will tell you guys about it when I get a chance if you're interested.

Can someone explain the difference between cacao and cocoa powder? I accidently brought cocoa from the health food store today. They didn't seem to have any cacao accept in the nibs, seems we're a bit behind in Australia. Would the nibs be an ok substitute?

My son likes these! He gave up on his 100-day challenge because he likes so few raw foods that he was getting super bored. Little does he know I'm keeping him going with as much raw as I can - he just needs to feel less restricted & things should go well, I hope. In the meantime, I'm trying to get him transitioned into eating vegetarian, so I wanted to get him eating bee pollen but was afraid he wouldn't like it. He saw this video & wanted to make these, so we did, and he loves them. He also tried the bee pollen by itself (after seeing you do it on the video) and he ate a little more of it on purpose because he likes it! If you knew at all how afraid he is of trying new things, you would understand better how grateful I am for this recipe & your wonderful videos. Thank you!

I made these this morning to eat for dessert tonight. I added 1/2 tbs of Spirulina to the mix to have additional nutrition. They turned green ;) but they are yummy.

Mmmmmm i just made these and they're DeLiCiOuS!!! :) (okay so i got a little gung ho and didn't read the part about soaking everything first so ended up having to add a bunch of other superfoodie yumminess too until it all stuck together, and then had to wet my hands to keep it all from sticking all over me! but it ended up super delicious! :)
thanks for the inspiration, if not the direct recipe! (smile) i'll have to have a do-over soon! :)

I think this would be an awesomely delicious way to use the nutmeal leftover from my almond milk-making. Mmm!

(I made these this morning (with agave instead of bee pollen) before I thought of that, so now I have ground almond sitting in a colander by my sink. How many brownie bites can I eat in a week? :))
