Dont know of any better (more affordable) resources that the experience of your peers - lol. If the top of my head, if I had my kitchen to do over again I would:
NOT put in lower kitchen cabinets....those always store pots & pans and I have VERY few of those now days. I would put in shelves for cool storage of home ferments and SPROUTING SHELVES (with an automatic watering system) in their place
I would also make sure I had a HUGE freezer-less refrigerator
I would have LOTS of replace/repair-able chopping block countertops
I would filter any city water (in kitchen & bath)

i just uploaded a drawing for a raw kitchen. i saved it a while back, tho i can't recall where i found it. it was a contest for the best raw food kitchen design and this was the winner.

Make sure you have plenty of storage space for jars...of all sizes. One thing I have searched for in vain on the Internet is raw kitchen designs and pictures. All I have ever dug up are lists of stuff you can put in a raw kitchen. There was a thread in the forum last summer/fall where rawfu'ers were posting pix of their kitchens. This is the closest I've ever seen...even on raw food videos on YouTube they never seem to give a kitchen tour! Hey! Lisa! This could be your calling! Since you get to start with a gutted kitchen...you can build the dream raw food kitchen and show us how you do it!!!!!! What a blessed opportunity....One of these days I'm gonna make it back to Sauvie Island for a bike ride and a tour of your new raw kitchen!
