100 Day Raw Food Challenge

I have the loveliest husband. I made us Enchanted Broccoli Forest for dinner, which I love (and I'm working on a raw version!), and I was really tired from standing in the kitchen and chopping things. So after dinner I was saying that I really didn't know if I was going to make the raw dessert I had looked at, even though I'd already defrosted my dates and blueberries. So he helped me make it!

And we both loved it! It's the "Raw Peach Cobbler" from Angie's Raw Kitchen blog, only I used blueberries instead of peaches because that's what Trader Joe's had and they were organic. It was great! And the leftovers were even better the next day. I don't have the link here at work for it, I'll google it tonight and put it up.

It made me very happy to have an Easter dessert that we both enjoyed and that I didn't feel bad about eating!

Raw desserts are definitely the best way to tempt others into the glorious world of raw foods. Who can say no to fantastic raw sweets?
