I hope I am doing this in the right place. Anyway, it has been about 2 weeks for my husband and I. What I want to know is when does this actually start to feel good? I see people saying how great they feel but I am not getting any of that. I am EXTREMELY tired, on an emotional roller coaster, overwhelmed, my brain is in a fog and I can barely maintain. I know there is some detox involved but how long will that take? I just can't function like this.

I know a lot of people say you just have to go through the detox, but I don't agree that it's always best to just push through it. If the body is supported enough, the detox will not have to be painful/miserable/difficult. It sounds like you're doing a lot of great things for yourself. I'd love to help if I can. I still have room for a few free assessments (I'll bump up my discussion about it - "I need volunteer clients!") so you can see if it's something that would interest you.
Yes, this can be extremely overwhelming and TIME CONSUMING. It takes a lot of energy to hand prepare fresh meals 3x a day. Often I resort to cooked stuff liked steamed veggies or rice just because I need something to eat for lunch w/calories.
If you continually feel horrible though it may be that what you are eating or not eating what is not right for your particular physiology. Don't feel like you have to give up meat/dairy just because others say raw vegan is ideal. Some people need a bit of that stuff to stay in balance.
