I have her cookbook and absolutely love it! It was the first raw food cookbook I bought because it was specifically designed for small quantities and doesn't require the use of expensive kitchen equipment. I've made this salad as well and it's delicious!
I actually have Jennifer's book (though she is much more adorable in the video :D) and have used some of her recipes but seeing her demonstrate a recipe is way different. I've always had problems with eating greens because they are so tough and I'm happy to now know a technique for making them soft. I'm going shopping tomorrow and I can't wait to buy some kale and collard greens!
