What do you do with your Fall and Winter veggies?

I am having trouble with what to do with fall and winter veggies...if anyone has ideas or recipes I would so love it if you would post the info and help a Texas girl out:)

What do you mean by "fall & winter veggies"? I would love to help, but all that makes me think of is squash, since I live in Utah and there are no winter veggies. :)
