I just wanted to leave you with the recipe for the lasagna!!!!!!!!!!!!!!!!! :)

The Recipe
(taken from the RAWSOME un-cookbook):


The cheese:

3 cups of pine nuts
2 tablespoons tahini
1 tablespoon lemon juice
2 cloves of garlic
1 tablespoon nutritional yeast (optional -not a raw product)

The veggies:

4 cups spinach
4 zucchini
1/4 cup olive oil
1 tablespoon lemon juice
2 teapsoons fresh basil
2 teaspoons fresh oregano
1/4 teasppoon celtic salt
1/4 mustard powder

Note*** for a twist, I once added some portabello mushrooms chopped
and marinated in Nama Shoyu to give it a more 'hearty' flavor

The sauce:

4 dates, soaked for 2 hrs
1/1/2 cups sundried tomatoes, soaked for 2 hrs
1/1/2 cups chopped tomatoes
1/2 cup chopped fresh basil
2 tablespoons olive oil
1/2 teaspoon celtic salt

Start out by making the cheese: combine everything in a food processor and puree.
I didn't dehydrate it, but you can if you like to add a crunchy texture. Spread on solid dehydrator sheets and dehydrate till firm (about 4 hrs)

For the veggies: wash and dry spinach and set aside. Use a mandalin and slice zucchini horizontally to create the 'pasta' strips. I actually cheat here sometimes and just press down hard with a potato peeler to make the slices, which works great too!

Combine everything from the veggies section and marinate the zucchini for one hour.
To tell you the truth, if you are lazy or in a rush, you can also just use the zucchini strips themselves without all the other ingredients or marination.

For the sauce: combine and pulse in processor until well blended and chunky

To assemble: Chop the spinach. Place layers of zucchini on the bottom of a glass plate. Add the cheese, a layer of chopped spinach and then layer on the sauce. Repeat until all ingredients have been used.

Serve fresh and enjoy!
