Peace, it does not mean to be in a place where there is no noise, trouble or hard work. It means to be in the midst of those things and still be calm in your heart.

I love to do a nut date too! I use cashews since I can't find pecans here.

Here's another quick treat if you do raw honey - chop up about three dried figs. In a small bowl combine a spoonful of raw honey, a spoonful of raw tahini and a pinch of sea salt. Stir in the figs. Dates stuffed in celery are great too. Frozen b...

My favorite thing lately is to open up medjool dates and put a pecan on each half. You can sprinkle the dates with cinnamon and salt first like a mini cinnamon roll. Couldn't be quicker and they're filling. All my friends love them too when I carr...

How Long Have You Been Raw?
1-3 Years
Why Do You Want to Join Raw Fu?
I have been living in Athens, Greece for 7 years. I have been raw on and off for over a year now. I joined the first 100 day challenge and made some great friends and lost a little weight along the way. This last winter was hard on my diet. I struggled and struggled to stay on the raw path but when cooking for my three kids I found that I feel off the wagon more often then I want to even remember. My family is not raw but they are a long way from the SAD diet and do eat an enormous amount of seasonal fresh fruits and vegetables. This month I have started a juice feast. I had tired last year but was not very successful. I envied those that I followed but just wasn’t mentally prepared to succeed. This time around the experience is totally different. I am finding I can do and it feels great. I have made lasting friendship here on Raw Fu and found loads of information and inspiration!

A fruitful time of the year!

I’m done with the 3 day food curse Connie talks about. I’m finally feeling back in control after all the chaos from the Greek wild fires. I have continued to do my Pilates every morning, Wii fit at night and hand weights twice a day to try and get rid of my wings! I’m also walking and not taking the car when going to the movie store or down the hill to pick up little things.
Summer is coming close and a new chapter is being open. Really significant event have happened to me my entire life this t… Continue

Our experence in the Greek fires

Gratitude on the Adventure!

It was 2 years ago when the out of control wild fires swept through Greece with a vengeance. I remember the sorrow I felt for the people who lost everything. Watching the Greek’s helpless attempt on the news to save their homes and property with brooms, branches and garden hoses. I remember mourning over the wildlife that was lost and the trees and am still reminded of the destruction when I travel the mountain roads looking at the black skeleton forest. I also have… Continue

Missing Em

Our chameleon died today. She was an old woman. My son got her 5 years ago and she has been a big part of our family. What started out as a science project grew into a family member who we all loved. She was so fun to feed and watch and make up funny stories about. She was a good pet that kept our house fly free. The kids are all brokenhearted and our house seems very still now. Tony is such a good Daddy, holding the poor lizard in the sun her final hours of life. My poor son was so upset cradli… Continue

Seven Years Ago Today

It was seven years ago today. It was seven years ago today that our adventure began. It was seven years ago today that we moved to Greece.
It rained all day today, I love the rain. I like the way it smells, I like the way it feels on my face, my hair, the sound it makes as it falls to the ground. I like how clean it makes the earth feel, washed and fresh and God knows Greece needs to feel washed and fresh right now. I like how it takes my mind to the Northwest and lets me freely drift back in ti… Continue

Pumpkin Pudding

Amazing Pumpkin Pudding
I filled my blender about half full of sweet pumpkin; our pumpkins in Greece are small and full of thick walls of meat. I added 8 soaked dates along with the soak water, one hand full of walnuts and about 1 tsp of pumpkin pie spice and a little pinch of sea salt. I blended it up into a thick creamy pudding it was so yummy, my non raw son, the pumpkin pie connoisseur, licked the bowl clean! Being the huge chia seed fan that I am I mixed half with chia seeds for my evening… Continue

That sounds beautiful! I have been making special time lately dedicated to each child and to us as kids together with mom...beyond just homeschooling. They grow so fast...I figure I need to make every moment count. Your children sound incredible....bc of their incredible Mom!!! I have learned without a doubt that when I rebel and go all out away from vegan/raw that my body rebels in the most horrid ways. I am slowly getting back to that sexy lady in my pix...gluten and heavy cooked foods tear me up and every bit of it shows on my face. I am juicing quite a bit now bc I want to have some very special Christmas pictures with me in them this year! Plus, we are going shopping as a family to buy lots of new clothes and I want some cool stuff....not hiding the flab crap clothes I have "settled" for in previous years! I am seeing that I am reaching that mark! I am excited for a new look!

I feel so blessed to be on the Raw Journey. I have only had apples and carrots today, but I will be eating more raw foods soon as I go shopping. Otherwise I will just water fast until I make it to the store. :) I feel really good for only 1/2 day raw! Simply amazing.

Thanks for the Love!

How exciting that your family will be in Greece for your son’s graduation, you must be trilled to see them on your turf! How long are they going to stay?

I was born in Poland and we came to the states when I was three years old. I’ve lived in the same community since then. I actually live in the house we moved to when I was 11 years old. My parents moved out to the suburbs and I stayed. It’s a rather unique situation in today’s day and age but I’m happy here. Plus I work in the same city so I only have a few blocks to travel and I get to go home for lunch, I’m spoiled, no commute. At some point I’ll relocate, I’d love to move out to a small town somewhere and have more space around me.

My city is full of immigrants, it’s the type of place people settle because it’s a walkable community and they are able to live inexpensively and save up to move out the suburbs…then the next group of immigrants appears and it starts all over again. We’re known as a Polish community (and still have a number of Polish immigrants) but now we also have a large Muslim population. On any given day you could walk into a variety of stores and hear Polish, Arabic, Urdu or Bosnian being spoken, it’s kinda cool.

You’ve been in Greece for quite a while. Do you ever see yourself returning to the states? I think it would be a great adventure to move to another country and really experience it day to day. How old were your children when you relocated?

I googled the book you’re reading and it looks fascinating. I’ll have to put it on my “to read” list.

My raw food journey is not going all that well. I’ve been socializing too much and it’s difficult for me to be raw when everyone around me is not. I’ve tempered my goals to a green smoothie and salad a day and decided to stop beating myself up about everything else. How are things going for you?

Thanks! I had fun, and I'm DYING to go back! It will probably be a while, though. I plan on stopping there during Thanksgiving weekend, for sure, if not sooner. I've been doing pretty good on the diet, maintaining over 95% raw, but my weight loss has slowed down. I need to up the intensity/frequency of my exercise. I still have 100 pounds to lose. I've actually been doing mostly salads, too. But I'm wanting to buy the things for a few exotic recipes this weekend. Maybe I'll take pictures of those, too. I haven't tried the onion rings yet, but want to. I bought some zuchinni to make more zuchinni chips, but haven't had the time to make them. I think I've perfected my recipe- I slice the zuchinni in the cuisinart, really thin, then coat in olive oil, and top with nutritional yeast, smoked paprika and sea salt- Dehydrate ...I think I did overnight and they were great in the AM. Still working on my kale chip recipe.

This afternoon I had coffee with one of my oldest brother's ex-girlfriends (lol), who has remained a friend of the family for the last 30+ years. It was awesome. She's like a big sister to me; one of the few people alive who know all (or most) of the players in my life who can also relate to a lot of my life experiences, and not judge. Both she and her husband are truly wonderful human beings.

Is it just me, or is time speeding up??? How can September be half over already?

Something is happening to me, and I think it's a good thing. It is a good thing. Of that I'm pretty confident. But I'm not entirely sure yet what it is . . . .

YOU be kind to YOU!!!

Returning your love . . . catch it!
