A million pleases, can you tell us; are there recipes in any uncookbooks for any of the beautifully tantalizing treats in your photo's? I'm especially intrigued by the layered brownie type squares and what looks to be a berry mousse pie. Well, and the blueberry tarts and the.......I'm in love with them all and I don't even know them! I've never been one to fall in love at first sight but raw food can apparently change even that! I have to say, I too was noticing myself being strangely very very excited about my blender arriving in the mail. The dehydrator was even more of a love-in!

GET. THE. VITA-MIX.

It's not a blender. It's a way of life. I've had mine for, what, a week? And I'm telling you. It's something else. In fact, I just logged on over here specifically to post about the (warm) smoothie I'm currently drinking and how it's just...WOW, dude. I get it. The blender I had before was decent as far as blenders go, but this one? And it's not even the one Costco has -- it's the 4500, so lower on the Vita-mix totem pole -- it's the bee's knees.

Vita-Mix Deal!

I'm feeling a wee bit silly for being so over-the-top excited to be purchasing a kitchen appliance next week.

After much browsing, cost comparing, even fantasizing, and yes, horrid infomercial watching, I clicked onto a couple of forums from the Fall of '08, talking about the Vita-Mix 5200 being available once in a while from...Costco. A few more googles, and I found some sparse information about the Vita-Mix 5200 being available at Costcos in eastern Canada (I'm on the west coast).

diet journal, day 8

well, I'm not very good at journalling every day, as it turns out. oh well. i will try to recall everything i ate today, and perhaps another day i remember to do the same...;)

breakfast: buckwheat crispies (ani phyo) with a sliced banana & almond milk

lunch: smoothie & local raw food/smoothie joint. so good. (i had 6 pieces of their raw sushi yesterday, which was so good, it made me so happy that there's a place i can go "out" to eat at once in a while..)

day 5 diet journal

smoothie:
1 banana
1 cup frozen mixed berries
2 tbsp udo's choice oil
2 tsp enerex greens
2 tsp maca

snack:
2 carrots
3 tbsp bean-free (zucchini) hummus (ani phyo)
cup of blueberry tea

late lunch:
1/3 cup guacamole
1/2 a cucumber, sliced into "chips"
1 slice raw berry cream pie

dinner:
1 slice raw pizza w/ dried black olives, sundried tomatoes, fresh basil, tomatoes, macadamia nut "cheese" & marinara sauce (ani phyo). sooooo good.

Raw Coconut Squares

I made these ones up one day with ingredients on hand. it was a hit, and i have made it multiple times since!


Coconut Squares

crust:

1/2-3/4 cup soaked raw almonds
2 Tbsp coconut flour
seeds of 1/2 a vanilla bean
1/2 cup dates
2 tsp virgin coconut oil
dash of sea salt
1/3 cup almond meal
(for dusting)

Pulse the first 6 ingredients in the food processor until well mixed dough forms. Evenly sprinkle bottom of 8x8" square pan with almond meal to keep dough from sticking. Press dough int… Continue
