The thing I am most surprised about is the fact that I can throw together a delicious, satisfying raw meal with the stuff that's just laying around.

I know it's been a week since I posted last, but to be honest, I've been so busy! This week Rory and I pretty much spent all of our free time going through our old stuff and either re-purposing them, or sending them to a thrift store. I unloaded boxes and boxes of really great books to a local nursing home, who will sell them at their next charity event. I am so glad to see them go to a good cause. It's day three and I am still doing very well. Not too many cravings, but I am hungry if I don't have a smoothie to nurse. I've been drinking about 200 oz of smoothie a day.
Day Two meal plan
I woke up and I was already very hungry. Luckily I had made myself a smoothie and put it in the fridge.
2 dates
1/2 cup pineapple
1 handful blackberries
1 cup strawberries
1/4 lb spinach
1/4 lb romaine

And yes it does come out a beautiful bright green color - and at first I must admit that since I do not like peas, it made me think of pea soup and I didn't know how it would taste, but when I tasted it I was in love! I suppose the onion and garlic overpower anything else so use your judgement and might want to take down the garlic a bit. But this is my original recipe:

1 Young Banana
2 Tablespoons of Coconut Milk
1 Tablespoon raw honey (or agave nectar)
A bit of cinnamon
A small handful of cashews
A few peanuts
A TINY bit of sunflower or palm oil
3/4 of a cup of water

I just made my first Raw Orange Julius by accident! I haven't had one in over 10 years and I forgot how good they taste!
Becky's Raw Orange Julius
2 Oranges
3 tsp nutritional yeast
1 tsp vanilla
1 tsp honey or agave
2 bananas
2 large handfuls of ice
1/4 cup water
Toss everything into the blender and let 'er rip until smooth. Makes over 32oz

I figured out that journaling my raw food intake and experiences is a good way for me to stay on track, and a good motivator for me stay true to my way of eating. Besides, it helps me unload at the end of the day, which also helpful for my well-being.

Blessing's Corn Chips
4 ears corn, decobbed
2 cups sprouted sunflower seeds
1/2 yellow onion
2 cloves garlic
1 teaspoon sea salt
1/2 teaspoon cumin
1/2 teaspoon onion powder
Put all ingredients in a food processor and blend until smooth.
Spread evenly, about 1/4 inch thick on Teflex dehydrator sheets.
Dry for about 8 hours at 105 degrees. Flip onto bare screen and
dry for another 12 hours until crispy.

Flax seeds are brand new in my diet, and I just love them. I had been afraid that they would have that sharp, slightly stale taste, but the scoop I got from the bulk bins at PCC are sweet and chewy. Today I ground a tablespoonful in the Braun coffee mill and added them to my breakfast smoothie. Good taste and good nutrition.

I was just thinking
Salad for breakfast? I'm such a rebel!
Then I realized
It's so easy to wake up and have blended fruit and water.
Then within an hour or two, think about what else I'd like to have.
It could be lettuce, it could be cucumbers,
Zucchini seems to abruptly come in and out of season and sometimes I have sprouts that are ready to eat.
Top this all with a sweet or spicy dressing
Use salt if it's a warm day
And I'm set until early afternoon.

One lime, peeled and chopped
Salt
Drizzle of sunflower oil (Cold-pressed olive oil would work just fine.)
Whirr in food processor, and pour over chopped romaine.
